About The Trail

Rajasthan is the home of fabled warriors, iconic heritage sites and a million accounts of history. It is also home to the subcontinent’s largest hot desert. Coming from this unique combination of history and geography is a culture that is special.

Times Passion Trails and Rajasthan Tourism bring to you a never-before opportunity to enjoy what is perhaps the most spectacular aspect of that culture – its cuisine.

The food of the state has been deeply influenced by a scarcity of water, and consequently, of vegetables. But a visitor doesn’t miss those vegetables, such is the spirit of innovation!

In the past, hunting expeditions of warriors gave birth to an entire range of dishes, using ingredients that were lasting for long periods. Lentils and beans are commonly Oil and red chillies help preserve the food and the requirement for water.

This unique trail spanned the Shekhawati, Marwar and Mewar regions of the state, accompanied with sampling everything from street food to its main dishes to the delectable desserts and drinks. All this in the backdrop of some great heritage.

The Times Rajasthan Cuisine Trail, conducted by The Times of India in partnership with Rajasthan Tourism, went through several places in the state and the participants celebrated the flavours of Rajasthan at every pit-stop. Here are some glimpses of the trail that ended Sep 5th, 2022:

Dushyant Singh

Dushyant Singh is a restaurateur, gourmand and traveller. Exploring cuisine from around the world inspired him to take it up as a profession. Over the last eight years, he has dedicated himself to creating more palatable experiences in dining, catering, and festivals. Moving beyond traditional Rajasthani cuisine, he has introduced the people of Jaipur to true continental flavours, with his own bistro.

His ventures – On The House Bistro & Bakers, All Spice Catering Co., Gourmet Getaway, Rustic – Inspired Kitchen, The Lama – Pan Asian and more and Coffee Sutra – have all been started with a vision of bringing in some of the most delectable and delightful experiences to food lovers in Jaipur and beyond

He has won many accolades, such as ‘Restaurateur of the Year’ – by Times Food and Nightlife Awards 2018, 2019, 2020.

As Experience Architect of the Times Rajasthan Cuisine Trail, he took the participants on an exciting journey through the state’s delicacies, showcasing not just the taste, but talking about the ingredients of the dishes, the history and traditions behind their creation and the innovation that has given them new shape and form.
